The “Food as Medicine: Got Phytonutrients?” photo was taken with an iPhone SE camera. The colorful photo depicts a unique variation of a quick salad prepared by the food artist after a long run/walk/hike. The salad emphasizes nutrient density with a variety of bell peppers, medley tomatoes, cilantro, romaine, spinach, and avocado topped with a homemade tahini and lemon dressing. The salad is served over a bed of rice to increase carbohydrate load post workout. The food artist is known for assembling leftovers in the refrigerator to make them appetizing and appealing. The colorful vegetables in this photo are packed with phytonutrients to combat inflammation and replenish vitamins and minerals.

Artist Statement

Artist: Christine Lauer, CGHS

Christine Lauer has been an endurance athlete for over 20 years, completing her first marathon in 1999. Since that time, she has pursued increasing distances in triathlon, running, and cycling. She is a 2x Ironman Distance Triathlon finisher, 120-mile marathon finisher, and 5 marathons in 5 days finisher. While physical training plays a significant role in preparing for long distance events, Christine credits nutrition strategies for her ability to train, race, refuel, and recover after events. She is a registered dietitian who places strong emphasis on plant-based nutrition and using food as medicine. She loves developing new plant-based recipes and taking colorful photos of food. She is currently pursuing her doctorate in health sciences at ATSU.
