The Purple Potato Vegetable Tower photo was taken with an iPhone SE camera and is an original food creation by the food artist. The food artist enjoys dabbling in the kitchen to create plant-based recipes with varied colors, textures, and flavors that inspire individuals to incorporate more vegetables into their diets. This creation came together on the fly with leftover purple sweet potatoes, some staple food items in the kitchen, and a cheesecake pan to hold it all together in the oven. The flower-like top of the vegetable tower was inspired by the vibrant colors of the purple potato and the purple and yellow petunias the food artist plants outside her house in the Spring. The vegetable tower is layered with high protein, high fiber soba buckwheat noodles, marinara, almond ricotta, spinach, yellow bell peppers, cherry tomatoes, and purple sweet potatoes. The vegetable tower is also garnished with a plant-based parmesan. This plant-based creation is dairy free, gluten free, and loaded with phytonutrients to support the immune system and combat inflammation. Who says eating vegetables has to be boring?
